Sweet and Spicy Tomato Sauce with Tofu
A tasty new twist on an old classic
In a large saucepan over medium heat in hot oil, add tofu and brown garlic and onion. Stir in chili sauce, tomato juice, tomato paste and remaining ingredients. Reduce heat to low, partially cover and simmer sauce 35 to 45 minutes, stirring occasionally. Remove bay leaf before serving. Serve over whole-wheat pasta.
Variations: Lean ground beef or chicken can be substituted for tofu — just remember to drain the fat after browning the meat. Another option is to add Nutballs (recipe page 40) to the sauce before serving.
Makes 4 servings.
2 tbsp. flaxseed or vegetable oil
1 lb. (450 g) pre-packaged ground tofu or crumbled firm-style tofu
2 cloves garlic, minced
1 medium onion, chopped
1 bottle (285 mL) chili sauce
2 c. tomato juice
2 tbsp. tomato paste 1 tsp. basil 1 tsp. oregano 1 tsp. salt
1 tsp. marjoram (optional) 1 bay leaf
